Nokkelost Quiche

Ingredients

6 slices bacon, cooked and crumbled, and divided

2 green onions, sliced and divided

4 ounces Nokkelost, grated

4 eggs, lightly beaten

1 pound Quark

1/2 teaspoon salt *Some bacon can be very salty. If you are using salty bacon, leave out the salt.*

1 unbaked pastry shell

Instructions

Preheat the oven to 325 degrees F.

In a small bowl, toss together ½ of the crumbled bacon and 1/2 green onion.  Set aside.

Toss together the remaining bacon, and Nokkelost.  Spread onto the bottom of the pastry shell.

Whisk together the eggs, Quark, remaining green onion, and salt.  Carefully pour over the cheese in the pastry shell.  Spread to cover all the way to the edges.

Sprinkle the mixture of bacon and green onions over the Quark mixture.

Bake on the center rack of the oven until firm, approximately 50-60 minutes. The quiche should be set and not wiggly in the center.

Allow to cool 20-30 minutes before serving.
