Kale and Brussels Sprouts Salad

Ingredients⁠

Dressing

2 Tbsp shallot, finely chopped

1 garlic clove, minced

3 Tbsp lemon juice

2 Tbsp Dijon mustard

½ tsp salt

6 Tbsp extra virgin olive oil

Salad

1 large bunch kale, stems removed and thinly sliced

1 cup pink lady apple, chopped

8 oz. brussels sprouts, cleaned, trimmed, and thinly sliced

4 oz. Appel Farms Feta

½ cup sliced almonds, toasted

⁠Instructions

Add the shallots, garlic, lemon juice, mustard, and salt to a medium bowl and whisk to combine.  Slowly drizzle in the olive oil while whisking briskly.

Toss the kale, apple, and brussels sprouts in a large bowl to combine.  About 30 minutes to an hour before serving, drizzle the salad with the dressing and toss to coat.

Just before serving, add the feta and almond slices and toss lightly to incorporate.
