Shrimp Linguini

Ingredients

  • 1 medium onion, chopped

  • 2 garlic cloves, minced

  • ¼ cup olive oil

  • 2 cups diced fresh tomatoes

  • 2 tablespoons chopped fresh basil

  • 1 pound medium raw shrimp, cleaned and deveined

  • 1 pound linguini, cooked and drained

  • ¼ pound Appel Farms Feta, crumbled

  • Salt and pepper to taste

Instructions

Sauté the onion in the olive oil until translucent. Add the garlic and sauté for an additional minute. 

Add the tomatoes, basil, and shrimp, cook approximately 5 minutes or until the shrimp is pink and cooked through. 

Then add the linguini, salt, and pepper, cook just until hot. Add the feta and toss to incorporate. Serve immediately.
