Shrimp Orzo Salad

This recipe makes a large salad which makes for a hearty side or a light summer meal.⁠

Ingredients⁠

Juice from one lemon ⁠

1/2 cup olive oil⁠

1 pound orzo⁠

1/2 cup toasted pine nuts ⁠

1-pound cooked salad shrimp⁠

12 ounces grape tomatoes, halved. ⁠

1 1/2 cup Appel Farms Feta, cubed or crumbled.⁠

1/4 cup fresh chives, chopped.⁠

⁠Instructions

Whisk together the lemon juice and oil in a large bowl.⁠

⁠Cook orzo according to the package directions. Drain well then toss the hot orzo in the lemon and oil.⁠

Cool orzo, then add the pine nuts, shrimp, feta, and chives. ⁠

⁠Season to taste with salt and pepper. ⁠

⁠Serve chilled⁠
