Shrimp Orzo Salad
This recipe makes a large salad which makes for a hearty side or a light summer meal.
Ingredients
Juice from one lemon
1/2 cup olive oil
1 pound orzo
1/2 cup toasted pine nuts
1-pound cooked salad shrimp
12 ounces grape tomatoes, halved.
1 1/2 cup Appel Farms Feta, cubed or crumbled.
1/4 cup fresh chives, chopped.
Instructions
Whisk together the lemon juice and oil in a large bowl.
Cook orzo according to the package directions. Drain well then toss the hot orzo in the lemon and oil.
Cool orzo, then add the pine nuts, shrimp, feta, and chives.
Season to taste with salt and pepper.
Serve chilled
