Sweet Potato & Feta Salad
To make your salad more flavorful, just add sweet potato!
Ingredients
2 medium sweet potatoes, peeled and diced
1 small red onion, cut into 1-inch pieces
2 Tbsp honey
2 Tbsp olive oil
4 cups baby spinach
½ cup sliced almonds
4 oz Basil Tomato Feta, crumbled
1 medium lemon, juiced
Salt and pepper
Instructions
Heat oven to 350°F
Place sweet potatoes and onion in a medium bowl. Drizzle with the honey and olive oil and stir to evenly coat. Spread the sweet potatoes and onion on a parchment lined baking sheet.
Place the baking sheet in the center of the oven and bake for 20-30 minutes, stirring occasionally. Sweet potatoes should be soft and starting to brown. Allow to cool.*
Place all the ingredients in a large bowl and toss gently. Add salt and pepper to taste. Serve at room temperature or chilled.
*Roast the potatoes and onions up to three days before serving. This is a great work-week lunch.
