Swiss Tuna Melts
Ingredients
1/3 cup mayonnaise
1 Tbsp Dijon mustard
2 – 6 ounce cans tuna packed in water, drained
1/4 cup celery, chopped
2 Tbsp green onion, minced
2 tsp fresh parsley, minced
English muffins*
Farmstead Swiss, sliced*
Sliced tomatoes (optional)
Freshly ground black pepper (to taste)
*amounts vary depending on preference.
Instructions
In a small mixing bowl, stir together the mayonnaise and mustard. Add the tuna and stir to break up the larger chunks. Add the celery, green onions, and parsley, stir to combine. Add the pepper if desired.
Lightly toast the english muffins then place them face up on a baking sheet. Portion out 1/4 to 1/3 cup tuna mixture per english muffin. Top with tomatoes, if desired, and sliced Farmstead Swiss. Broil until the cheese is melted. Alternately, top half the english muffins with the tuna mixture, tomato, and Farmstead Swiss and broil as directed above, then top with the other half of the english muffin for a Swiss Tuna Sandwich.
