Gouda, Apple, & Pecan Salad
Ingredients
DRESSING
½ cup honey
2 Tbsp Dijon Mustard
1 tsp celery seeds
1 tsp paprika
½ tsp onion powder
1 tsp freshly squeezed lemon juice
2 Tbsp apple cider vinegar
½ tsp salt
1 cup canola oil
SALAD
1 head lettuce, torn into bite size pieces
1 cup Appel Farms Smoked Gouda, cubed
1 medium red apple, thinly sliced
1 cup buttered pecans*
Instructions
In a blender, combine the honey, mustard, celery seeds, paprika, onion powder, lemon juice, vinegar, and salt. Turn the blender on medium and gradually add the oil in a steady stream until emulsified. Place in the refrigerator for at least 30 minutes.
Toss together the lettuce, gouda, apple, and pecans. Bring the dressing to room temperature and serve with the salad.
*Buttered Pecans
1 cup pecan halves
1/2 tsp fine sea salt
2 Tbsp unsalted butter, melted
Preheat the oven to 325°F. Toss the pecans in a bowl with the melted butter and salt. Spread the pecans in a single layer on a rimmed baking sheet.
Bake for 12-15 minutes or until toasted, stirring halfway through.
Mild, creamy, buttery and pairs so easily with many things. Our Goudas are young (typically 2-3 months of age).
