Chicken Cordon Bleu Casserole
Ingredients
2 cups uncooked pasta
6 Tbsp butter, divided
1/2 onion, chopped
3 Tbsp flour
2 cups milk
2 cups Farmstead Swiss, grated
3 cups cooked chicken, cut into bite-size pieces
2 cups cooked ham, cubed
Salt and pepper, optional
1 cup panko breadcrumbs
Instructions
Preheat the oven to 350°F
Cook pasta according to directions on the package. Drain and set aside.
In a skillet over medium heat, cook the onion in 3 tablespoons butter until soft. Add the flour, cook and stir for 2-3 minutes. Stir in the milk. Cook, stirring constantly, until the sauce starts to thicken.
Add the Farmstead Swiss, one handful at a time, allowing the cheese to melt between additions. Continue to cook until the sauce is a nice consistency.
In a large bowl, mix together the cooked pasta, chicken, and ham. Stir in the cheese sauce. Add salt and pepper if desired. Ham can be salty so taste it first before adding salt. Transfer to a baking dish.
In a small microwave safe bowl, melt the remaining 3 Tbsp butter. Mix in the panko bread crumbs. Spread the crumb mixture evenly over the casserole.
Bake for 25-30 minutes or until golden brown.
