Feta: protein, calcium, vitamin b6 and b12, phosphorus

Chickpeas: fiber, protein, iron

Avocado: healthy fats, vitamins, potassium

Tomatoes: vitamins C and K1, folate, potassium

Why this recipe works: It is a quick and easy dinner with complete nutrition. Heart healthy, almost keto (chickpeas are a little high in carbs). Light for summer. Can be a full meal or a side!

Feta benefits: adds nutrition as well as flavor. Boosts the overall flavor with the milder flavors of the avocado, tomatoes, chickpeas, and romaine.

Ingredients⁠

4 ounces Oregano Tomato Garlic Feta, cubed or crumbled

4 cups romaine lettuce, shredded

1 – 14 ounce can chickpeas, drained and rinsed

16 ounces grape tomatoes, halved

2 Hass avocados, chopped

3 Tbsp Olive Oil

2 Tbsp Golden Balsamic Vinegar (or any light balsamic)

Salt and Pepper to taste

⁠Instructions

Combine the feta, lettuce, chickpeas, and avocado in a large bowl.

Whisk together the olive oil and vinegar.

Pour the oil and vinegar mixture over the salad and toss lightly. Add salt and pepper to taste.

Serve immediately, and enjoy!
