Feta and Spinach Frittata

Ingredients

8 eggs, lightly beaten

1/2 cup heavy cream

1/2 teaspoon salt

1/4 teaspoon pepper

3 tablespoons olive oil

1/2 cup diced onion

5 ounces baby spinach

1/3 cup sundried tomatoes, chopped

3/4 cup Appel Farms Oregano Tomato Garlic Feta, divided

 Instructions

Preheat the oven to 350 degrees.

In a bowl, whisk together the eggs, milk, salt and pepper. Stir in the sundried tomatoes and ½ cup of the Feta.  Set aside.

In an oven proof skillet, saute the onions in olive oil until translucent.  Add in the spinach and saute until wilted.  Add the egg mixture.  Stir and cook for 1-2 minutes.

Sprinkle the remaining feta on top and move the skillet to the oven.  Bake until set and starting to brown, about 18-20 minutes.

Cool for 5-10 minutes before serving.
