One Pot Beef Pasta

Ingredients

1 Tbsp olive oil

1 small onion, diced

2 celery stalks, diced

2 large carrots, diced

4 cloves garlic, minced

1 Tbsp dried Italian seasoning

½ tsp crushed red pepper

2 Tbsp tomato paste

½ tsp salt

1 pound hamburger

3 ½ cups unsalted bone broth, or good quality beef broth

1 Tbsp red wine vinegar

12 ounces uncooked penne pasta

2 (14 oz) cans diced tomatoes (do not drain) 

3 Tbsp fresh basil, chopped

3 Tbsp fresh parsley, chopped

6 oz Appel Farms Havarti, grated


Instructions

Preheat oven to 350°F

Heat the olive oil in an oven-proof pot or dutch oven on the stovetop over medium heat.  

Add the onion, celery, and carrots.  Cook until the onions are translucent. Add the garlic, cook 2 minutes. Add the Italian seasoning, red pepper, salt, and tomato paste.  Stir and cook for 2 minutes.

Add the hamburger and cook until no longer pink.

Stir in the broth, vinegar, pasta, and diced tomatoes.  Bring the mixture to a boil. Cook 10 minutes or until the pasta is almost done, stirring frequently.

Stir in the fresh basil and parsley.  Sprinkle the Havarti on top and place in the oven for 15 minutes or until the pasta is done and the Havarti is melted.

Serve warm.
