Lucky Cupcakes

Saint Patty’s Day special LUCKY cupcakes are SO fun for the kids’ classrooms, to whip up for when guests are coming over, or really anytime in the month of March. These cupcakes are the perfect festive way to celebrate the month of the Irish. Make sure to take a picture and tag us when you try out this fun treat!

Ingredients⁠

1 box white cake mix (not with pudding added in the mix)

1 cup Appel Farm’s Quark

2 large eggs

½ cup oat milk (or milk of your choice)

1/3 cup vegetable or canola oil

1 can cream cheese frosting

Marshmallows from Lucky Charms

Sprinkles, if desired

⁠Instructions

Heat the oven to 350F.  Place cupcake liners in a standard muffin pan, this recipe makes 24 cupcakes.

In a mixing bowl, combine the cake mix, Quark, eggs, oat milk, and oil. Blend until combined.

Fill the cupcake liners about 2/3 full.

Bake for 14-19 minutes.

Allow the cupcakes to cool completely before frosting.

Place the frosting in a small, microwave safe bowl.  Heat the frosting in the microwave for 10 seconds, stir, then another 5-10 seconds if needed.  The frosting should be about the consistency of pancake batter and cool to the touch. 

Dip the tops of the cupcakes in the frosting, hold the cupcake over the bowl to allow excess frosting to drip off, then move to a platter. Decorate them with Lucky Charm marshmallows and sprinkles as desired. This is fun for kids to do and uses a lot less frosting than spreading it on.
