French Onion Soup

Time to snuggle up with a bowl of soup. French Onion Soup is warm to the soul and satisfying to the tastebuds! This recipe uses our Farmstead Swiss Cheese made here at Appel Farms. We love how this Swiss pairs and balances the onion in the soup to make a really great flavor. Let us know what you think!

Ingredients⁠

3-4 yellow onions, (about 2 pounds)

2 cups Appel Farms Farmstead Swiss

2 Tbsp butter

½ tsp salt*

4 cups beef, chicken, or vegetable broth (or a combination), low or no salt

1 bay leaf

1 sprig fresh herbs, optional

French bread

⁠Instructions

Trim the top and root off each onion, then halve lengthwise.  Remove the peel and slice, pole to pole, into half-moon shapes.

Set an electric skillet to 300 degrees and add the butter.  Once the butter has melted, add the onions and salt, if using (see note).  Toss to coat the onions in butter, then cook, stirring occasionally, until the onions are a deep brown.

Add the broth, bay leaf, and herbs.  Bring the broth to a boil, then reduce the heat and simmer for 15-20 minutes. 

Place the oven rack on the top 1/3 of the oven and turn on the broiler.

If necessary, trim the bread to fit in the top of the ramekin or oven safe bowl.  Brush with melted butter, if desired, and place the slices on a baking sheet.  Broil for 30 seconds to a minute, or until toasted.

Taste the soup for seasoning and add salt and pepper as needed.

Remove the bay leaf and herbs.  Ladle the soup into oven safe bowls, leaving one inch to the lip.  Place a generous amount of Farmstead Swiss in the bowl, cover with the bread, toasted side down, then top with more Farmstead Swiss.

Broil until the cheese is golden and bubbly, about 1-2 minutes.

*Some store bought broths are high in salt.  If you can’t get low or no salt broth, then leave the salt out.
