Fondue for two
Valentine’s Day is the perfect excuse for fondue… at home.. in your pajamas… with company of your choosing. Celebrate love with the love of cheese.
Ingredients
8 ounces baby potatoes, scrubbed and quartered
8 ounces Kielbasa, sliced
1 tablespoon extra-virgin olive oil
1/3 cup whole milk
4 ounces Farmstead Swiss, grated
4 ounces Gouda, grated
1/8 teaspoon freshly grated nutmeg
2 teaspoons lemon juice
2 teaspoons white wine vinegar
1 teaspoon cornstarch
Instructions
Preheat oven to 375 degrees. On a rimmed baking sheet, toss potatoes and kielbasa with oil; bake for 10 to 12 minutes. Stir. Continue to bake until potatoes are golden and tender and kielbasa is browned, 8 to 10 minutes more.
In a small bowl, stir together lemon juice, vinegar, and cornstarch. Set aside.
In a small pot, heat the milk until hot but not simmering. Slowly add both cheeses, stirring continuously, until melted. Add nutmeg.
Slowly stir the cornstarch mixture into pot; continue to cook over low heat, stirring, until mixture thickens and comes together, 4 to 5 minutes. Transfer to a fondue pot; keep warm.
Serve with the roasted potatoes and kielbasa. Other great dippers are sliced apples, toasted baguette slices, breadsticks, or blanched vegetables.
