Chicken Broccoli Casserole

Ingredients

  • 6 cups broccoli, cut into bite size pieces

  • 1 lb boneless, skinless chicken, cooked and cut into bite size pieces

  • 4 tablespoons unsalted butter

  • ½ cup onion, chopped fine

  • 2 cloves garlic, minced

  • 4 tablespoons flour

  • ¼ teaspoon freshly grated nutmeg

  • 2 cups whole milk

  • 6 ounces Appel Farms Maasdammer, shredded

  • Salt and pepper to taste

  • 4 ounces Appel Farms Parmesan, finely grated

Instructions

Preheat the oven to 350 degrees F.

Steam the broccoli until tender.  Mix the cooked chicken and broccoli in a large bowl and set aside.

Cook the onion in the butter until translucent.  Add the garlic and cook one minute.  Stir in the flour and nutmeg.  Stir constantly for about 3 minutes.  Add the milk and heat, continuing to stir, until the sauce just begins to thicken.

Add the Maasdammer a little at a time, letting it melt between additions.  

Pour the sauce over the chicken and broccoli and mix through.  Taste for seasoning.

Spread the chicken mixture into an oven proof casserole dish.  Sprinkle the parmesan evenly over the top.

Bake for 25 to 30 minutes or until golden brown and bubbly.
