Mediterranean Chicken Salad
Ingredients
½ cup red onion, thinly sliced
¼ cup red wine vinegar
6 ounces uncooked rotini noodles
¼ cup extra virgin olive oil
1 tablespoon capers
2 tablespoons fresh basil, chopped
2 tablespoons fresh parsley, chopped
¼ cup kalamata olives, chopped
1 pinch red pepper flakes
1 cup seeded and chopped cucumber
1 cup seeded and chopped tomato
1 lb chicken, cooked and cut into bite sized pieces
¾ cup Appel Farms Oregano Tomato Garlic Feta, cubed
Salt and pepper to taste
Instructions
Mix the onion with the vinegar in a small bowl and set aside. This will quick pickle the onion.
Cook the rotini noodles according to the package directions. Drain and set aside.
Stir the olive oil, capers, basil, parsley, olives, and red pepper flakes in a large bowl. Add the cucumber, tomato, chicken, Feta, rotini noodles, and pickled onion with the vinegar to the bowl and toss gently.
This can be served warm or chilled. Enjoy!
